It’s Danny’s last 2 days in Singapore before flying out to Canada and he opted to spend Thursday lunch with me. Julian of HBO joined us and we couldn’t help but discuss business, but also happy to spend some personal time with Danny and catch-up. They initially invited to dine at Imperial Treasure but since that was where I had lunch the day before, they decided to go Western and brought me to db Moderne Bistro.

DB stands for Daniel Boulud, a French chef born in Saint-Pierre de Chandieu, France whose Dinex Group has restaurants in New York City, Las Vegas, Palm Beach, Miami, Montreal, Toronto, London and its only Asian presence, Singapore.
He is best known for Daniel, his eponymous, Michelin 3-star restaurant in the Big Apple. In February 2011, Boulud opened a db Bistro Moderne at Marina Bay Sands in Singapore.
We decided to do the Prix Fixe menu instead of ordering ala carte. Julian and I ordered the 2 courses each, while Danny ordered the 3-course set so we can all share the appetizers, entrées and two desserts.

THE ORIGINAL db BURGER
The Original Daniel Boulud Burger is a sirloin burger filled with Braised Short Ribs & Foie Gras and served on a Parmesan Bun. The kitchen cut the burger into four and skewered it to make it easier for us to share. The burger almost melts in the mouth and it was a beautiful symphony of meaty flavors.

Sadly, the photos I took using my iPhone look sad and doesn’t justify the plate but the dishes were absolutely delicious with the db Burger, Mushroom Penne, and Chocolate Mousse highlighting the entire meal. I’d love to visit Daniel Boulud’s db Moderne Bistro again and check out their other items, need I say steak, as I really enjoyed our lunch there.
